Diego & Tina drinking "The Civitella"
On January 28th, we celebrated Diego's first trip to New York with two of his favorite things- Pizza and Poetry
We were privileged to have poetry read by both Mark Strand and David Lehman, who shared poems he wrote while on a hammock at Civitella.
Those delicious drinks you see Diego and Tina holding are called "The Civitella," a vodka, lemonade, and thyme drink created for us by our bartender Matt Yeager. Below, please find the recipe he was kind enough to give us:
Thyme Syrup:
Add equal parts sugar and water to a pot. Heat until the sugar is fully dissolved. Add a bunch of thyme, cover, let cool, then refrigerate overnight. The syrup should be good for up to five days. The more thyme you use, the better it will be.
Thyme Lemonade:
1 part fresh lemon juice
1+ part thyme syrup
3 parts water
Once you make the lemonade, it doesn't hurt to throw another bunch of thyme into the pitcher.
The Civitella:
2 parts Vodka
5 parts Thyme Lemonade
Place a thyme sprig in a highball glass, add ice, then indregients.
Garnish with a lemon wedge, half-moon, or wheel.

What a grand time we had. It was great to seen the soon-to-be papa Diego and meet past and future fellows.
